Easy Slow Cooker Latin Dishes for Busy Weeknights

Some might argue that there’s no better way to cook carnitas, or pulled pork, than in a slow cooker. Just season your pork shoulder with your favorite seasoning (we like cayenne and smoked paprika) and drop it in a juice bath to tenderize for hours. Ideally, a traditional mole can be cooked for up to 48 hours to develop all the flavors, but thanks to the slow cooker the time for a proper mole has been narrowed down significantly. Just leave those spices and chocolate to simmer for hours to get that rich velvety end result.

The great part about cooking your black beans in a slow cooker is that it makes them perfectly tender and ready to eat without any soaking time. It also allows for the beans to absorb all of the spices and seasoning without them turning into mush.
