The recipe of abuelita’s arroz con leche

Rice pudding the way your grandma use to make it. Delicious dessert made from rice, milk, lime, sugar and cinnamon.


- ½ cup rice
- 1 ½ cups of water
- 1 piece of lime zest
- 1 small cinnamon stick
- 4 cups of milk
- 1 cup of sugar
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- Cinnamon powder (garnish)



1. Wash the rice thoroughly. In a saucepan at medium heat, cook the rice with the water, lime zest, and cinnamon stick for about 10 minutes or until the rice is soft. Add the milk, vanilla, salt and sugar and bring just under a boil.
2. Cook at medium-low heat, uncovered, until the rice has absorbed most of the milk (about one hour). Stir every so often so that it doesn’t stick.
3. Sprinkle with cinnamon powder. Pour onto serving bowl(s) and place in the fridge for about an hour. Serve cold.
